White Bean Chili Verde

Amazing & Quick & Vegan/GF (or not)

No matter what way you choose to make this recipe it is still a quick, easy meal that tastes amazing. With a few easy ingredient swaps you can have a Gluten Free, Vegan meal or a protein packed dish. Ingredients: 2 Cups Ocho Verde Salsa (or your lesser alternative), 2 Cups White Beans, 1 8oz Can Green Chile, 1 Large Onion - diced, 4 Cloves Garlic, 4 Tbs Olive Oil, 1/4 Cup Flour (or your Gluten Free alternative), and 2 Cups Water. Optional: 2 Chicken Breasts - diced. It is really this easy. Add your olive oil to a dutch oven or pot, sauté the onions until slightly soft then add the garlic and green chile. Stir, continue to sauté for a few minutes then add the flour and stir to incorporate. Add the water, beans, and Ocho verde salsa (the flavor) then bring to a boil and reduce to simmer. If you wanted to add chicken, you can add with the other wet ingredients. Let simmer 30 minutes or more, the longer the thicker it will be. If added chicken, be sure it is fully cooked.
